Decadent Vegan Chocolate Chip Cookies

A HEALTHY VEGAN COOKIE THAT TASTES LIKE EVERYTHING BUT !

As we enter week six of this self-quarantine, we have spent (well I have spent if we're being honest), most of my day baking and eating sweets. And well, what else are we gonna do, right ? So I've got to perfectionate some of my all time favorite recipes, including this decadent, healthy but doesn't seem to be, vegan chocolate chip cookie.

Because although we need a bit of a boost to lift the quarantine spirit, I also wanted a healthy enough treat.. There is only so much you can eat you know what I mean ??

So this little cookie is vegan and could easily be gluten free. It is full of delicious melted chocolate and has a gooey center like real cookies do, but has for secret ingredients apples and coconut oil. You could replace the all purpose flour with gluten free flour or almond meal, although they might come out a little dryer. 

MAKE WAY FOR THE BEST VEGAN COKIE I'VE TRIED TO THIS DATE -

Makes about 15 cookies :

1/2 cup harden coconut oil

1/2 cups light brown sugar

2 teaspoons vanilla extract

1/4 cup almond milk

1/4 cup applesauce

2 and 1/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

2 cups dark chocolate chips or chocolate chopped in pieces

Pre heat your oven at 190°c (3570 °f)

In a bowl, mix the sugar, vanilla extract and the solid coconut oil (it is really important for it to be solid, otherwise your cookies won't hold in place) until it reaches a sort of cream and there are no more lumps of coconut oil.

Then you can add the apple sauce (if you use store bought apple sauce make sure it is unsweetened, or use a little less sugar for the recipe. If you make it yourself, simply peel and chop apples and cook them in a little bit of water, until they are soft) and add the plant based milk and mix well together.

Then add the flour, baking soda and salt and work the dough until all the flour is incorporated. Throw in the chocolate chips and when it's all well mixed, start to scoop little balls of dough on an oven tray. Make sure to space them well (around 5cm on each side) as they will expand a little bit. You can push on them a little bit with a spoon to  flatten them slightly.

Cook your cookies for 10 to 15 minutes, depending on how big you made them, or until they get slightly golden. Let them cool completely so they can harden and enjoy ! If you have any left to keep (not a given, let me tell you) then keep them in an airtight box for up to a week.

These cookies are so good they don't even taste vegan. It is a banger of a recipe and I hope you love them as much as we do !
