Oat Milk Dreamy Pancakes (vegan)

A HEALTHY VEGAN PANCAKES THAT TASTES LIKE EVERYTHING BUT !

Joaquin and I make pancakes every week, sometimes even several times a week.. This recipe is so quick to whip up and uses basic pantry ingredients so we usually have it on shopping days when the fruits and veg shelf is getting empty.

The best thing with these pancakes is that they are super fluffy and sweet and yet they are full of protein, and Omega 3s. Best way to kick start the day.

You can top up this recipe with jams and syrups or go a little healthier and make it with a fruit compote by boiling some apples and pears together and adding a few drops of vanilla extract. The fruits are naturally sweet and taste delicious with the pancakes ! You can also top them up with nuts and nut butters, or go the savoury route and make a tofu scramble on the side or some grilled kale chips !

Either way, this recipe is about to knock your socks off. 

MAKE WAY FOR THE BEST VEGAN PANCAKE RECIPE I'VE TRIED TO THIS DATE -

Makes about 12 to 15 pancakes :

2 cups of flour (125g)

2 tablespoons of coconut sugar (or regular brown sugar)

1 teaspoons vanilla extract

2 tbsp baking powder

1 tbsp hemp seed powder (optional)*

1 tbsp maca powder (optional)*

1/2 tsp salt

2 cups oat milk (480ml) or other non dairy milk

2 tbsp apple cider vinegar

Maple syrup or fruits to serve

* I like to add natural protein sources to those recipes to boost their nutritional profile. Hemp powder is tasteless and full of protein, is great for digestion and hormonal balance, and so is maca powder, another powerful root from Peru. You are welcome to add any protein source you like or non at all !

#1 PREP TIME

In a bowl, mix the dry ingredients AKA your sugar, flour, baking powder, hemp and maca if using, and blend them well together. Then you can pour in the milk and using a whisk, blend the dough well until there are no more lumps. Then add the vinegar and vanilla extract and blend until it's all smoothe.

 

#2 COOK IT ALL UP

Place a flat pan on medium heat, and use a piece of coton dropped in sunflower oil or other tasteless oil and slide it all over the pan to grease it slightly.  Once the pan is too hot to touch, ​using a large spoon, scoop some dough onto the pan, forming little circles. You can go as large or small as you want !

Once you see a lot of bubbles on top of your pancakes, use a flat spatula to flip them onto the other side. Let them cook for another few minutes and place them on a separate plate. Redo the process until you are out of dough !

Now just top them up with your favorite maple syrup, fruit compote or nut butter of choice and eat hot !
 

These pancakes are so fluffy they don't even taste vegan. It is a banger of a recipe and I hope you love them as much as we do !
