Sweet Potato Tortillas With Goddess Cream

EXPLORING VEGAN OPTIONS TO MAKE THEM AS SATISFYING AND FULL OF LIFE AS POSSIBLE

We've said it before, we love to eat wraps, tortillas and flat breads in general. Not only because it is fun to eat and can basically be filled with anything you'd like, but because they are really easy to make, and instantly look amazing.

The goddess cream is made with silken tofu and a lot of fresh herbs and lemon juice. It tastes creamy and delicious, and can be made with whatever you have in your fridge. Sometimes I'll run out of fresh herbs and will use radish or carrot tops (filled with nutrients and perfect once blended) or even some spinach leaves.

You can also make it with some fresh mint and pieces of cucumber for a tzatziki like cream.

I really find that these tortillas go perfectly with the goddess green cream, and grilled vegetables add a great flavor and texture too. This cream is also perfect for any salad seasoning, a dip with some raw vegetables or inside a sandwich. It is rich in nutrients and protein, super creamy and flavorful. Same goes for the tortillas, you can of course use them for whatever you want ! I've even tried them with some nut butter and chocolate chips.. Just to give you an idea of their range of taste !

I've been making tacos and tacos related meals for years now, and this combination is one of the most diverse and different I've tried. Originally tacos are filled with meat and dairy, but the plant-based world is infinite in it's options of tastes and textures - plenty for us to play around with !

To make 1 small jar of goddess green cream :

  • Half a package of silken tofu 

  • 1 fat garlic clove

  • 2 tablespoons olive oil 

  • 1 tablespoon lemon juice, or to taste

  • 1 tablespoon nutritional yeast flakes (optional)

  • 1 teaspoon salt, or to taste

  • Ground pepper

  • 1 fat scallion, white and green parts

  • ¾ cup of fresh herbs, a combination of parsley, coriander, tarragon or basil goes great in it too. 

To make 5 Sweet potato tortillas :

  • 3/4 cup boiled and mashed sweet potato

  • 1 cup cassava flour or rice flour

  • 1/4 teaspoon of salt

Roasted veggies, such as carrots, onions, cooked and drained chickpeas, bell peppers according to the season.

Start by heating up your oven at 200°c, chopping your chosen vegetables thinly and placing them on an oven tray. I like to slather them in olive oil, salt pepper and even throw in a little smoked paprika. Let them cook for 30 minutes, or until slightly golden and tender. 

To make the tortillas, blend very well your boiled sweet potatoes, and mixing them with the flour, adding it little by little. Work the dough with your hands until it is dry enough to form a ball. Divide the dough into 5 equal parts and flatten them with your hands or using a rolling pin, on a lightly floured surface. 

Then on a pan at medium heat, simply throw one tortilla at the time, without any oil needed. Once they are golden on both sides, place the tortilla in a tea towel on a plate to keep it warm. Simply wipe the pan so that the remaining flour doesn't burn and throw in the next tortilla.

While your tortillas are cooking, blend together all the ingredients for the goddess cream and blend them at high speed, scraping the sides often, until you reach a smooth green cream. Taste and add more salt, pepper or lemon juice to your taste.

All that is left to do is assemble your meal, by slathering each tortilla with a good amount of goddess cream and some roasted vegetables on top. I like to add little pieces of green chilies and coriander to garnish, and a good squeeze of lemon juice or lime. 


 

This is the perfect recipe for every season, it is rich in nutrients and super satisfying. You can play around with the herbs you add to your goddess cream, with the grilled vegetables and even the type of flour you add to your tortillas. It is playful and completely cruelty free !
