7 Healthy Road-Trip Snacks

WE ARE ON THE ROAD MOST OF THE TIME FOR WORK, AND THESE SKACKS HAVE SAVED US FROM KILLING EACH OTHER MORE THAN ONCE !

We have been on the road for the better part of two years now, living in our home on wheels and crossing countries for work or pleasure. Two things we never leave without are a good playlist and some snacks. Here are our favorite go-tos !

Nothing worst on the road than to get "hangry". I like to keep a snack box under my seat with easy access to delicious and nutritious options.

We actually pack these snacks for all type of adventures, as they fit easily in jars and bags and can accompany us in our backpacks to make sure we stay filled with energy throughout the day ! Hold on to your hats, here they come.

HERE YOU WILL FIND NUTRIENT PACKED, HEALTHY SNACKS FOR THE ROAD !

1. ENERGY BALLS

I like to whip up some quick and dirty energy balls when hitting the road. There is so many different options to make ! What I like in them is how easy they are to eat whilst driving, that they are packed with nutritional goods and sweet enough to boost your energy levels.

Makes 10 balls :

1 tablespoon of smooth peanut butter

6 dates, pitted

1/2 table spoon of peanuts

5 dark chocolate squares

To melt the chocolate, I like to use a double boiler technique, by placing a hot water pot above the fire, and placing a bowl with my chocolate above it. The steam coming from the boiling water melts chocolate perfectly !

However you like to melt your chocolate, once it's done, set it aside.

Place all of you remaining ingredients in a blender and pulse until you get thick dough.

All that is left is to shape small balls in the palm of your hands and roll them in the melted chocolate. Here I like to use parchment paper to place the balls on, making it easier to remove once it hardens.

You can pop your energy balls in the fridge and enjoy them whenever you are ready !

2. TRAIL MIX

This is the laziest yet most rewarding snack there is. Simply toss in a jar some nuts, seeds, dried fruits and voilà ! Healthy on the go snack for the hungry.

3. FRESH FRUITS & NUT BUTTERS

I like to cut up a big tupperware of fresh fruits in quarters to make them easy to grab and dip in nut butters. Fresh fruits help rehydrate you in long journeys and keep you full of vitamines. Paired with nut butters, it is the perfect filling and nutritious snack !

4. HOMEMADE GRANOLA BARS

I don't make these bars as often as I should, but when I do.. Man oh man do they go fast. They hold perfectly for a few days, are easy to eat on the road and packed with nutritious goods ! There are so many recipes for you to play around with, raw or cooked. I like to have them raw since they are faster to prep and last a little longer.

Makes 12 squares :

1 cup of almonds

1/2 cup of cranberries

1/2 cup of goji berries 

1/2 cup of sunflower seeds

2 tbsp of flax seed

1 tbsp of pine nuts

1 tbsp of almond butter

1 tsp of pure vanilla extract

1 cup of dark chocolate (melted)

Toss all of your ingredients in a food processor and blitz until you reach a dough-like consistency. Press the mix at the bottom of a square pan or tupperware until nice and smooth.

All that there is left is to cut them in squares, and cover them in melted dark chocolate. Keep them in an airtight container and they stay perfect for a week.. Or an afternoon if you eat them as fast as we do.. Perfect and easy healthy snack for the road !

5. SPICY ROASTED CHICKPEAS

I am a big fan of rusted chickpeas for both how easy it is to make and how deliciously filling they are. And they are so versatile ! You can have them with lime and paprika, cumin, salt and vinegar.. Much more nutritiously friendly than chips and simply delicious.

To make :

Toss one can of cooked and drained chickpeas on a baking sheet, add a tablespoon of olive oil and sprinkle some salt and pepper and cumin or paprika on them.

Bake at 175°c for 45 minutes, then cool and enjoy ! They stay perfect in an airtight container for up to three days.

Easy and nutritious, one of the best healthy vegan road-trip snack !

6. HUMMUS AND VEGGIES 

I like to prep a jar of hummus before heading on for a long road-trip to have with veggie sticks. It is my way of making sure we have plenty of protein and vitamines coming our way while on the road. 

It is super easy to store and their bite size makes them much easier to handle on the road ! 

7. HEALTHY SANDWICH OR WRAP

Although we travel with our house in the back, we rarely feel like cooking after hours behind the wheel. And who doesn't love a big wholesome sandwich on fresh bread ? It's possibly one of the best comfort food there is.. And beats the hell out of those triangle sandwiches you find in gaz stations. 

I like to make sandwiches in the morning or just toss them together on breaks, and we often eat them as we drive !

My personal favorite is whole grain bread with a spread of hummus, avocado, packed with loads of fresh veggies like cucumber and bell peppers, salad leaves, sprouts and some mustard. Yuuuuum.
