Homemade Dumpling Soup

FUELING THE MIND AND BODY WITH THIS SIMPLE TO MAKE AND SURPRISING RECIPE

I use to think making raviolis was the hardest thing ever, until I learned how easy it actually is when living in Nepal. Although the taste changes a little from the ones I use to make in Katmandu, the principle stays the same and it is incredibly easy and fun to make.

What I love about this dish is that the raviolis are not the only thing you eat. The broth is so delicious and flavorful, meaning that if one or two dumplings open during the cooking, it's no big deal ! It's the perfect introduction to the dumpling world, if you will.

These bad boys can be frozen, if you are in the mood to make a big batch to enjoy later, or eaten straight away. They only take five minutes to cook and are a wonderful option to make if you have an hour ahead of you and feel like impression yourself AND the gallery.

The hardest part of this recipe is the ravioli fold. Make sure your raviolis are very well sealed to avoid them opening up during the cooking. But if they do, it's also fine, the broth is full of vegetables and no one will notice ! To seal them all the way, you can use a little bit of water. 

Make sure you don't over stuff them, so the wrapper doesn't stretch out too much and tare, and have fun with it all !

Wonton Soup for four (about 30 dumplings)

2 chopped mushrooms 

2 small chopped carrots

2 onions, finely chopped

3 cm piece fresh ginger, minced

1 clove garlic, minced

1 small leek

3 teaspoons soy sauce

For the soup:

1 L vegetable broth (or water)

1 onion, chopped

1 leek chopped

2 carrots chopped

2 cm piece of ginger, minced

1 garlic clove, minced

2 tablespoons soy sauce

1 tablespoon vegetable oil

1 thai chili chopped (optional)

1 tablespoon of miso paste

You can choose to buy the dumpling squares, or make it yourself.

To make it : (makes about 30 wrappers)

2 cups all-purpose flour + more for rolling

9 tablespoons of warm water

1 pinch of salt

Instructions :

To make the wrappers :

Mix the flour, warm water and salt in a bowl and work the dough by hand until you can form a ball. Then taking small amounts at the time, simply flatten it with a rolling pin until it is nice and thin. Then, using a cookie cutter or a large glass, cut circles in the dough. Place the ready circles in a plate with a sprinkle of flour over them to avoid them sticking to the others.

To make the wontons :

In a hot pan, put the vegetable oil as well as the garlic, ginger and onions. Let them caramelize a little, before adding the rest of the vegetables and the soy sauce. Let them cook on medium heat and add a little water if the vegetables begin to stick to the pan. Once the veggies are tender (after about ten minutes), you can make the wontons.

Using a teaspoon, place a small amount of vegetables in the center of a circle, then fold the wrapper in half and seal it well using a little water or pressing on them firmly. Then, like the pictures show above, fold the moon carefully and press together the tips.

To make the soup :

In a pot, put the vegetable oil as well as the garlic, ginger and onions to caramelize just like for the stuffing. Then add the bouillon and rest of vegetables to the pot along with the soy sauce and miso paste and let simmer until the vegetables are cooked and the broth is well infused with the flavors.

Then bring the soup to a boil and throw the dumplings one by one in the pot. They are done in just four minutes !

You can serve the dumplings in bowls and cover them in broth, adding some chopped scallions, sesame seeds and spicy sauce if that floats your boat.

This dish is super fun to make and different to serve, if you find that you have some time on your hands (like we all currently do..), it's a great way to make a special dinner and impress everyone (including yourself) !
