Almond Tahini Cookies

(Vegan + Gluten Free)

A BIT OF A HEALTHY SNACK TO FILL OUR CUP TO THE RIM !

I've been craving sweets and comfort food ever since this quarantine started (well, if I'm being honest, ever since birth..). But with baking everyday, I've been eating A LOT of cakes and sweets, and I really needed to find a healthier cookie alternative, that still tastes like the real deal..

These cookies are made for that sweet craving whilst being packed with protein, healthy fats and omega threes. They will make your house smell like heaven and keep perfectly for a week. 

This recipe is super easy to make, is Gluten free and cruelty free and has pleased my entire family of non vegans - that's kind of the ultimate test right ??

HERE'S OUR HEALTHY BUT DOESN'T TASTE LIKE IT IS VEGAN COOKIE RECIPE !

Makes about 15 cookies :

1 cup almond meal

1 cup grounded oats 

3/4 cup tahini

1/2 cup maple syrup

1/2 teaspoon sea salt flakes

2 teaspoons vanilla extract

1/2 cup of chocolate chips

crushed cacao nibs, coconut flakes to garnish

Pre heat your oven at 170°c (340 °f)

I made the almond meal by blending a cup of almonds until they reached a powder consistency, same for the oats, in case you don't have almond and oat flour.

In a bowl mix all of the ingredients until you can shape balls in your hand. Then with using tablespoon, scoop the dough and form a ball in your hands.

If you want decorations, simply sprinkle cacao nibs and coconut flakes over them, pushing them in the dough a little bit.

Place the cookies on an oven tray and bake them for ten minutes. Let them cool completely before eating them or they will be very crumbly ! These cookies keep perfectly for a week in an airtight container.
