Colorful Spring Rolls, Vegan + Gluten Free

A MESSY AND COLORFUL RECIPE TO BRIGHTEN UP YOUR DAY

Spring rolls are one of my family's favorite "gathering" meal. When everyone gets together, we are usually over twenty people sitting at the dinner table, each with our own dietary needs. Spring rolls are the perfect option, as each person can make their own. Filled with fruits, herbs, peanuts, rice noodles, lime, ginger and so much more, it turns into a playful and creative meal.

I feel that it is always important as a vegan to hit the major food groups at every meal. Tailoring recipes especially to fit our needs has been a lot of fun and definitely applies here. No matter what your dietary needs are, it's always wonderful to fill your pantry with these "drawer" meals, where you can throw in whatever fruits and veg, protein and whole grains you've missed that day and you have laying around your fridge.. These spring rolls are super easy to make, they are fresh and delicious and will make a wonderful take away lunch or impressive and different dinner. They are filled with crunchy veggies and herbs, plant based protein and whole grain power. 

HERE'S OUR DELICIOUS VEGAN + GLUTEN FREE SPRING RLLS RECIPE

To make 5 large spring rolls :

5 dried rice paper sheets

1 carrot, julienned

1/2 cucumber, julienned

1 purple cabbage leaf, julienned

1/4 red bell pepper, julienned

150g of super thin noodles

2 limes

2 cm of grated fresh ginger

1 branch of coriander, chopped

5-10 leaves of fresh mint

1 small packaged firm tofu

1 handful of unsalted crushed peanuts

Sauce :

1/3 cup peanut butter

1 tbsp soy sauce

1-2 tbsp maple syrup

1 tbs of fresh lime juice

1/2 tsp chili flakes

1/2 tsp garlic powder

Water to dilute a little

1. Start by cooking the noodles according to the package and let them cool.

 

2. Slice your vegetables julienne, meaning in the length to have long but thin sticks. You can do the same with the tofu, cutting it in stipes. 

3. In a bowl, put all of the sauce ingredients and simply blend them well with a fork, until there are no more lumps. You can add more chili flakes, soy sauce or maple syrup to your liking. This sauce is also delicious on salads, accompanying a rice bowl 

4. Place the tofu stripes in a mall plate and cover them with the peanut sauce, letting them sit for about ten minutes to marinate.

5. In a large bowl, pour some hot water. Then begin to dip a rice paper, until it gets soft. Then lay it flat on a plate, add some tofu, and a bit of each ingredient, laying them in a line at the center of your spring roll and topping it up with the herbs, peanuts and ginger.

Then begin to roll, by folding the top and bottom of your spring roll, then folding the right side over and finishing with the left side. Each corner should meet at the center of your spring roll. Don't be afraid to pack them tight !

 

Now all that is left to do is dip them in that same peanut sauce and enjoy your meal !
